The nose pulls you in first: roasted pineapple and stone fruit, honeysuckle and white flowers, a little honey and spice underneath. Then the palate is where it earns its keep. Rich and textured, almost waxy, full of peach and apricot and that honeyed depth, but it never goes heavy or sweet. There's a mineral, wet-stone freshness holding the whole thing taut, and the finish just keeps going. Dry, layered, properly grown-up.

This comes from Château de Beaucastel, run by the Perrin family, one of the most respected names in Châteauneuf-du-Pape in France's Southern Rhône. The white is a tiny slice of the estate, just a handful of hectares of white grapes, led by Roussanne with Grenache Blanc and a few old regional varieties like Picardan, Clairette and Bourboulenc in the mix. Beaucastel is famous for sun-baked stones called galets that soak up heat by day and feed the vines at night. Small production, serious pedigree.
