There's a mineral, wet-stone freshness holding the whole thing taut, and the finish just keeps going. Dry, layered, properly grown-up.

This comes from Château de Beaucastel, run by the Perrin family, one of the most respected names in Châteauneuf-du-Pape in France's Southern Rhône. The white is a tiny slice of the estate, just a handful of hectares of white grapes, led by Roussanne with Grenache Blanc and a few old regional varieties like Picardan, Clairette and Bourboulenc in the mix. Beaucastel is famous for sun-baked stones called galets that soak up heat by day and feed the vines at night. Small production, serious pedigree.
