It's a blend of pot still whiskey (from malted and unmalted barley, dried in closed kilns so there's zero smoke) and smooth grain whiskey, all triple distilled in copper stills. John Jameson landed on that third distillation because he wanted it smoother than anyone else's, and it stuck. The spirit then rests at least four years in ex-bourbon and oloroso sherry casks, which is where the vanilla and that touch of fruit come from.
