Think green apple and gooseberry (that sharp, almost-tart green berry that defines good Sauvignon Blanc), with a little herby, leafy lift the South Africans call fynbos. The acidity is the star here. It makes your mouth water, keeps everything lively, and the finish is long and clean with no sweetness hanging around. Crisp without being thin.

Where it's from

This comes from Excelsior, a family farm in Robertson in South Africa's Western Cape, run by the De Wets since 1859. Here's the fun bit: the farm is as famous for racehorses as it is for wine. Back in the day it bred carriage horses, then champion thoroughbreds, and in 1981 a horse named San Louis won a big race whose prize money literally bailed the winery out the year floods washed the vines away. That's why there's a horse on the label and why it's called Purebred. The grapes are pulled from three different soils across the farm, limestone, river-deposited alluvial, and high shale, which is how one wine packs citrus, green fruit and that herby edge all at once.
