This one's a love letter to George Roe, a Dublin distiller whose operation in the Liberties was once the biggest in Europe before it shut its gates in the 1920s. All that's left of the old place is a windmill tower and a single pear tree that still blossoms. Diageo brought the name back in 2017, with master blender Caroline Martin building this blend of malt and grain whiskeys, mostly in first-fill bourbon casks.
