Glenmorangie is distilled up in Tain, on the Dornoch Firth in the Scottish Highlands. Their party trick is the stills: the tallest in Scotland, about the height of a giraffe, which is exactly why the spirit comes off so light and elegant before the wood gets to work. This 12 spends its years in American white-oak ex-bourbon casks, then takes a final rest in Oloroso sherry casks from Jerez in Spain, which is where all that dried-fruit and chocolate richness sneaks in.
