First the nose: a curl of bonfire smoke, sea salt, a whiff of citrus and something almost like fresh oyster brine. It sounds mad, it works. On the palate it's full and rich, with a sweet dried-fruit thing going on (think raisins and a touch of honey) wrapped in warm barley malt and smoke. Then the famous Talisker move: a hit of peppery heat that builds and lingers long after you swallow. Bold but not harsh, smoky but not a campfire to the face.

Talisker is the oldest distillery on the Isle of Skye, a rugged little island off Scotland's west coast where the weather does whatever it wants. It's been running since 1830, sitting right on the shore of Loch Harport, and that coastal life soaks into every bottle: the salt, the smoke, the sea-spray edge. The barley is malted and peated on the mainland, then distilled twice and aged at least 10 years in American oak casks. The maritime character isn't marketing. You can genuinely taste the place.
