EPC Blanc de Noirs is vinified with malolactic fermentation in stainless steel tanks (keeping the style clean and precise), then aged at least 40 months, including 28 months on lees for texture and complexity. The blend is 65% 2021 with 35% reserve wine from a solera started in 2018, finished with a low dosage of 5g/L (Brut).
EPC itself is a modern Champagne house founded in 2019, working closely with grower partners and a dedicated cellarmaster to co-create terroir-led cuvées.
How it tastes
Expect a nose that leans citrus + spice, then opens into ripe strawberry, raspberry and cherry. On the palate it’s rich and structured yet still fresh, finishing powerful but elegant with a lingering spice note.
Food pairing ideas
This style shines with charcuterie, roast chicken, truffle dishes or berries-based desserts pairings that echo Pinot Noir’s red-fruit depth while letting the bubbles keep everything lifted.
Serving suggestions
Serve well-chilled (around 8–10°C) in a tulip-shaped glass to hold the aromas, and pour gently to preserve the fine mousse.
