This comes from Golan Heights Winery in northern Israel, started back in 1983 by a handful of kibbutzim and moshavim who bet that the high, cool, volcanic-soil slopes of the Golan could grow serious wine. Turns out they were right. The Gamla range is their everyday-brilliant tier, and the Chardonnay fruit grows on the coolest, highest part of the Golan, which is exactly why it keeps that fresh acidity.
