The production process remains incredibly meticulous. Every autumn, freshly harvested Shiraz grapes from the Yarra Valley are brought to the distillery. The whole berries are steeped in high-proof Rare Dry Gin for eight weeks before being gently pressed.
The base gin relies on a magnificent blend of traditional and native Australian botanicals. Wild Tasmanian pepperberry leaf is used to add warmth and length to the palate without adding fiery heat, working in harmony with coriander, cassia, and fresh organic oranges. The real magic, however, lies in how the juniper interacts with the Shiraz. Juniper naturally delivers a fresh pine needle and medicinal note, which beautifully balances the rich, peppery and dense raspberry characteristics of the grape juice.
