The nose hits you with orange peel first. Real, sunny, just-zested orange, because they distil whole Australian oranges into it (peel, flesh, pith and all). Underneath that, classic pine-fresh juniper and a little waft of cardamom and cinnamon. First sip is bright and citrusy, then a gentle spice builds in the middle from Tasmanian pepperberry. It's warming, not hot, more of a glow than a kick. The finish dries out nicely with a hint of liquorice and lemon zest, so you're already reaching for the next sip.

Where it's from

This is the gin that put Australian gin on the map. Three mates, Stuart, Cameron and Matt, fired up a German copper pot still they nicknamed Wilma in the Yarra Valley back in 2013, just outside Melbourne. The whole idea was to bottle modern Australia: classic juniper from Europe, spice from Asia, and proper local heroes like lemon myrtle, Yarra Valley lavender and Tasmanian pepperberry leaf. The orange obsession is the signature. Whole fresh oranges go straight into the still. It's become one of the most awarded gins to ever come out of Australia, and one taste tells you why.
