This comes from Cognac, a strictly bordered patch of southwest France where the rules are tight and the craft is old. It starts as Ugni Blanc grapes, pressed and fermented into wine, then double-distilled in copper pot stills and aged in French oak. The V.S. you're drinking is a blend of more than 40 different eaux-de-vie, married together by Hennessy's tasting committee for that signature smoothness. The house has been at it since 1765, when an Irishman named Richard Hennessy set up shop. They've kept the standard scarily high ever since.
