They work out of a restored 17th-century farmhouse surrounded by their own vineyards, better known for Prosecco and grappa. For the vermouth they start with Merlot wine and infuse a secret recipe of over 30 herbs, flowers and spices, from absinthe and gentian root to Ceylon cinnamon, cardamom and orange zest.
