The agave hearts (piñas) are slow-cooked in traditional masonry brick ovens for up to 48 hours. What sets Olmeca apart is the use of the Tahona method—a 500-year-old process where a massive volcanic stone wheel (Tezontle) is used to crush the cooked agave, extracting the rich, sweet juice. This “Tahona liquid” is then fermented with cultivated yeast and distilled in small copper pot stills to ensure a smooth, clean, and high-quality finish.
