This comes out of the Elgin Valley, a cool, high pocket of South Africa's Western Cape that's prime apple country. It's a team-up between two serious winemaking families: the Cluvers, who've farmed De Rust in Elgin for five generations, and the Jacks, who were among the first in the country to plant proper cider apples and export the stuff. The apples (mostly Granny Smith, with Pink Lady, Royal Gala and Sundowner along for flavour) are hand-picked, fresh-pressed and fermented slow and cold at the Paul Cluver winery.
