Majority of the population across the world knows tequila is a type of liquor. For any tequila brand to be classified under the tequila category, 51% of the spirit must be derived from the blue agave plant. Today, there are a number of brands that use 100 percent blue agave, however, as a rule of thumb, tequilas curated with a lower percentage of agave are typically cheaper.

The flavor of tequila is primarily influenced by yeast. The yeast can be added into the blend as commercial yeast or wild yeast that is found naturally in the surrounding environment. The condition of the yeast is also influenced by the type of soil that the agave is grown in. Any tequila brand from the Highlands (Los Altos) is grassier and has a sweeter flavor profile, while any tequila brand from the Lowland areas (El Valle) is earthier with more mineral quality.

Most people have come to discover the different tequila categories by reading the labels on the tequila bottle. However, there is still a lot of information that should be broken down. The difference between all the Tequila categories lies in the fermentation and ageing process in oak barrels. Anejo is aged for one to three years, Extra Anejo is aged for three years or more. Reposado is aged for two months to one year, while Blanco does not go through the ageing process. If it is aged, it is not aged for more than two months.
